the day BEFORE Cinco De Mayo

So, here is the menu for tomorrow...

I'm going to marinade chicken thighs in fresh lime juice, cilantro & cumin. We'll grill those...
I'm going to season the corn on the cob with butter, lime juice & cilantro and we'll grill those too...
I'll make my signature black beans & rice...
I'll make a very quick guacamole & I have black corn chips...

And right before I hopped on here I realized I had tortillas so I'm thinking we could stuff all of these into a burrito sort of like chipotle does!

If my husband only picked up some Coronas we'll be in business!
