DIY Maple Pork Tenderloin in Baked Sweet Potatoes

Here is my plan for tonight:

I'm going to toss tiny cubed sweet potatoes & some butter, brown sugar, cinnamon (or pumpkin pie spice), and a pinch of salt. I'm going to throw this in a large pan.

In a large saute pan I'm going to cook some onions in butter.
I'm going to pre-season pork tenderloins with sage, salt and pepper.
I'll brown the pork tenderloins in the onions after the onions soften.
Once I brown the tenderloins I'm going to pour everything into my sweet potato mixture and nestle the tenderloins in the middle.

I'm going to take a combination of good maple syrup and apple cider vinegar and pour it over the browned tenderloin. If I have extra, I may drizzle a little over the sweet potatoes. I'll bake until it's done. I'll probably have to bake it covered as well..

Let's see how it comes out!!

  1. I added rosemary to the sage rub down for the tenderloin .... It was a little on the sweeter side but not enough to make me hate it. Flavors complimented each other & it was an easy sell to the kids.
