I lived near Utica, NY for a while & the big regional dish is Chicken Riggies. Most people have never heard of it. It is rigationi with a marinara sauce AND an alfredo/cream sauce that makes a PINK sauce... and chicken, of course. So, last night I needed a really QUICK dinner & this is the semi homemade QUICK verison of it.
Cooked Rigationi
Cooked Chicken
Half a jar of premade marinara & alfredo
fresh basil
garlic powder
All mixed together and you have what my husband called "comfort food".
Now, I generally don't like to use store bought short cuts- this is called DIY Cooking for a reason. But, some days I don't have time-- I ran too many errands yesterday and wanted to do it the quick way. There are many beautiful ways to make this dish more homemade & different variations of it. Some people add cooked onions when they are cooking the chicken... I've also seen red roasted pepers added and SPICY Chicken Riggies (by adding red pepper flakes).
This dish is very good & I highly recommend it...
