When meatloaf meets lasagna


I had summer squash and leftover ground beef.. I had heard of using summer squash as a pasta replacement and I made my meatloaf mix into meatballs...

Meatball mix
Ground beef
Eggs
Tomato purée
Garlic
Parsley
Basil
Oregano
Minced onion
Pepper
Progreso Italian bread crumbs
Chopped bacon
Shredded mozzarella 

Here I sliced green squash as lasagna noodle replacements 


This is what the meatloaf mix looks like

I made mini patties and pan fried them

I started to layer squash, sauce, cheese, meatloaf meatballs- repeat


I'm going to bake at 350 degree oven until the summer squash is done.. Maybe 30 minutes
